Chinese Sponge/Cream Cake with Fruits [Home DIY]


Hello all munchasaurus! It's taken Pi a little longer than most people to get back to daily routine after Christmas! (and can you believe it, it's already Feb!!)

Last month was my grumpasaurus' birthday, to make it a little extra special, munchasaurus pi decided to roll her sleeves up and make a birthday cake. Grumpasaurus isn't a big fan of sweet stuff but one cake he does like is a chinese sponge/cream cake with lots of yummy fruits!


You may wonder what is the difference between a normal sponge and a Chinese sponge?
A Chinese sponge cake is how I refer to the ones you can buy from a Chinese bakery, the texture is light, fluffy, less sweet and much more spongy... more like an angel cake, but with cream and plenty of fresh fruits! and who doesn't like that right?

The recipe I used was as follows:

For the cake:
1 cup of cake flour*
1 cup of sugar
6 eggs, separated
1 teaspoon vanilla exact
1/4 cup of cold water
1/2 teaspoon of salt
1/2 teaspoon of cream of tartar

For the filling and finish:
whipped cream
Any type of fruit - as much as you like!

1. Preheat oven to 160 Degrees.
2. Beat egg yolk and sugar till creamy then stir in vanilla. Add flour and water alternately till mixed well.
3. In a spearate bowl, beat egg white till foamy. Add salt and cream of tartar. Beat until stiff peak.
4. Fold egg white into batter in batches - remember to be gentle!
5. Pour into ungreased cake pan. Bake until toothpick comes out clean, about 50 minutes.
6. Turn upside-down to cool.
Because there's no oil in the cake, it does stick to the pan. Just use a knife to careful go around the pan. It helps if you use a pan that has a removable bottom.
7. Once the cake is cooled, cut it in half horizontally for layers.
8. To make the filling: Whip the cream until it's peak. Wash and chop some fruits and mix together with half of the cream. Once it's done, add the cream/fruit mixture on one layer of the cake than place the other layer on top (just like a sandwich)
9. Finally to decorate: Use the reminding cream to cover the whole cake with a thin layer. Then go crazy with the fruits and decorate it to how ever you like ;)

*If you don't have cake flour, don't worry - just take 1 cup of plain flour, then take 2 table spoons out and add in 2 table spoons of cornflours! and Wa La, you have some cake flour!

As there was only me and grumpasaurus, I halved the ingredients, used a heart shaped cake tin and decorated with his and mine favourite fruits. With a candle of course...
